More Kale!

There is no denying it. I love Kale, and everyone knows it! I don’t know why I love it, but I do, however I only enjoy it in a smoothie or fried – steaming it is gross and I imagine boiling it would have a similar effect on my taste buds.

But here we are again, with more kale and another “simple breakfast” that, when time is in a pinch, you can rustle up in about ten minutes. Funnily enough, it’s also another reason to crack out my skillet. So, here it goes!



1 sweet potato (skinned and cubed)
1 small onion (finely chopped)
1 handful of kale
2 free range eggs


  1. In a small pan, heat some oil (your choice of what to use, I tend to use olive oil) and add the sweet potato until it begins to gently fry and soften
  2. Add in the onion and fry until it just starts to become translucent, then add the kale.
  3. In another frying pan, heat some more oil and add your eggs. Fry them to your liking, however, a runny yolk really helps this recipe.
  4. Once both pans have finished cooking their contents, serve as you like. Either side by side, or with the eggs on top of the kale “hash”. Then enjoy.


It’s a simple recipe, and it’s not all that groundbreaking, but it’s nice and easy. I don’t for  second think I am some top rate chef or a star cook, but it’s these simple, home recipes, that sometimes help others out in a bind. I understand that not everyone has kale or sweet potatoes in as standard, but you probably should once in a while.
